Poached Pears with Rose Petal Sauce

This fall has been a journey. I got married! Which was so sweet and wonderful. I turned 30! Which still feels strange but also very exciting. We got a kitten, redid the apartment, slept in almost every day… it’s been a good one, but also very bittersweet. I’m finally accepting that I struggle with seasonal depression and it’s been hitting hard the past few weeks. So I’m taking action by trying to be as sweet to myself as possible. Instagram has been making me feel like shit, so I deleted it from my phone. Shipping products has been too overwhelming to do on my own, so I took down my online shop. (temporarily.. I think!!) I have been dreaming up this recipe for well over a month. I’ve been doing a good amount of pear and rose petal combos lately, but this one is BY FAR my favorite. It’s rich, easy and tastes like a rosey, caramel ice cream soup. I wrote this recipe with the intention of cooking or enjoying it outdoors. It’s the coziest dessert possible and I really really hope you enjoy it as much as I have.

Ingredients

4 pears, peeled
3 cinnamon sticks
1/4 cup dried rose petals
1 tsp ginger powder
1 tsp cardamom powder 
1 cup packed brown sugar
1 tsp vanilla extract
1 cup raw sugar
1/2 cup heavy cream
4 cups water


Pour water into a dutch oven or large lidded pot and toss in cinnamon sticks. Cover and bring to a boil. Let water and cinnamon boil for 10 minutes before adding sugars and spices. Cover and boil for 10-15 minutes or until liquid has thickened slightly and has reduced by 1/2 an inch or so. Add your pears and rose petals. Reduce heat to low, cover pot and and cook pears for 20 minutes, rotating every 5 minutes. Pears are done when you can easily slide a knife or fork into the fruit. Once pears are ready, slowly incorporate cream, about 1 tbs at a time, stirring constantly. Remove from heat and serve warm or cold

Sub heavy cream with coconut cream if you are vegan!
